Corn and Cheese Chowder–Recipe

Does anyone else watch “Pioneer Woman” or read Ree’s blog? I just started watching her show and reading her blog. I absolutely love the simplicity of some of the foods she creates.

The most recent episode was focused on chocolate, but to actually FEED her family, she made a corn and cheese chowder. As she started making it, I did a mental checklist thing: “yep, I’ve got that……I don’t have exactly that, but know I have a substitute…..yep, got that too” and on, and on it went. I realized I had everything I would need to make a variation of Ree’s Corn and Cheese chowder. My dinner plan for the night was born!

Here is what I put together for my Corn and Cheese Chowder:

6 tblsp. butter

1 large onion, chopped

1 pkg bacon, chopped into bite sized pieces (I used turkey bacon….shhhhh, don’t tell DH)

2 cups of chopped peppers (I used a mix of red, yellow, orange, and green…..basically what I had on hand)

2 cups corn (I used some of my freezer corn that we put away this past summer, but you could certainly use a couple cans of corn)

1/4 cup flour

3 cups chicken broth

1 cup half and half (you could also use milk)

2 cups shredded cheese (I used a mix of pepper jack and cheddar – you could also use Monterey jack, mozzarella, Colby, whatever you have on hand)

salt and pepper to taste

1. In your favorite soup pot or kettle, cook the onions in the melted butter until the onions are just starting to turn translucent (about three minutes).

2. Add the bacon and let things cook over medium high heat for about five minutes.

3. Stir in the peppers and corn.

4. Sprinkle on the flour and then stir well.

5. Pour in the chicken broth and half and half.

6. Add salt and pepper to your liking (I used about 1 tsp of salt and 1 tblsp of pepper – I REALLY like pepper)

7. Bring to a boil and then let simmer for about 15 minutes.

8. Stir in your cheese until melted. If you would like to add a bit of garnish, top soup with chopped green onion or fresh cilantro (I top EVERYTHING with fresh cilantro).
